산불이 지하 이탄지를 태운 것에서 아이디어를 얻은 데이미언 뉴턴-브라운은 플린더스 아일랜드에 이탄지가 있다면 진정한 해양식 이탄 싱글 몰트를 생산할 수 있을 것이라고 생각했다. 이제 이 증류소는 자체 곡물을 재배하고 태즈메이니아 제 구리 팟 스틸로 증류하며, 해변 위 숲속에 자리잡은 던니지 창고에서 배럴을 숙성시킨다. 언테임드 진은 주변 섬들에서 야생 수확한 쿤제아와 토종 로즈마리를 사용한다.

Sawyers Bay Unpeated Double Oak. 50 Year Old Seppeltsfield Tawny Port quarter casks form the heart of this dram, building a rich and expansive palate layered with lush dried fruits, muscatel grapes and dates. These casks were married with bourbon casks bringing soft vanilla sweetness and creamy oak that rounds the back palate into a beautifully balanced whole. 43.3% ABV, 700ml
Visitors to the distillery can experience tasting flights of our core range plus limited releases and "last pours" bottlings. Our beautiful cellar door has a fully stocked bar and some light snacks, so you can take your time and enjoy the view on the farm.
