Bordeaux-born winemaker Louis Costa spent years researching ancient meadmaking before landing in Byron Bay and turning Australian varietal honeys into dry, wine-style meads that bear no resemblance to medieval sweetness. His Newrybar operation produces still, sparkling and vintage styles — including a blanc de blancs equivalent and an off-dry blush Pet Nat — from sustainably foraged honey with minimal intervention.
