Dimitri Pittion-Rossillon trained in Paris before fifteen-plus years baking around Australia, then settled in Townsville with his family and opened Baker D North in 2020 — first as a Willows Sunday Market stall, then a shopfront when the pastries took off. The bake room is glass-walled — sit with a coffee and watch the croissants get folded and the sourdough get shaped. Wednesday to Saturday, 6:30am to 1:30pm, until sold out. Voted Townsville's Best Bakery the year after opening.
