Russ Watson built the still himself — fitter-and-turner background, no shortcuts. The property, a former chicken farm on the Bellarine Peninsula, came with heritage apple varieties and a dam once used by Cobb and Co coaches. Today it grows botanicals for the gin range, anchored by Teddy the Fox, while head distiller Craig Michael releases small-batch single malt each year.
