BOCA is gelato with a serious pedigree: a handmade Italian gelateria from award-winning chef Adam D'Sylva and pastry chef Monika Frkovic, made from scratch across two of Melbourne's inner suburbs. The foundation is classic — proper Italian flavours built on dairy from That's Amore and natural flavour sources rather than pastes — but the specials board is where the chefs show off, running to the likes of Basque burnt cheesecake and pumpkin spice. The repertoire stretches well past the scoop, too: soft serve, thick milkshakes, choc tops, tartufo, frozen cakes and house-made toppings down to cookie crumbs and honeycomb. It's the kind of place where a pastry chef's instincts are audible in every detail, and the queue out front tends to agree.
