Nick Haddow founded Bruny Island Cheese Co. in 2003 after a decade working with specialist cheesemakers in Italy, France, Spain, the UK, and Israel. The cheese is made with raw milk from his own small-scale dairy farm at Glen Huon, run for animal welfare and milk quality rather than yield. Beer Co. arrived in 2016, brewed with local ingredients to a seasonal rhythm. The cellar door at Great Bay carries the cheese and the beer, plus a curated range from Tasmanian producers and friends.
