Former Treasury economist Tim Reardon runs this Mitchell distillery with a precise instinct: only the "hearts" cut from each distillate makes it into a bottle. The range spans seasonal gins — try the Winter Gin with Fever Tree Clementine tonic — through to a Bourbon Cask Whisky. His current pour of choice: an Espresso Old Fashioned, bourbon and espresso-forward, with cacao and orange bitters.
A team member walks visitors through the range and, if the still is running that day, the day's distillate. Tours and tastings by booking. Private whisky cask programme available. Monday to Saturday, 10am to 4pm.
