Alasdair Sutherland, a Scot, named his Hunter Valley winery after the Gaelic word for black woodland grouse — and the ornithological quirk holds up. Since 1995, Capercaillie has accumulated over 950 show awards drawing on fruit from across South Eastern Australia, though the Hunter Valley–only bottles are the ones worth seeking.
