Andrew Carruthers has been making Méthode Traditionnelle ciders on his family's Carmel orchard since 2013 — three generations of fruit farming informing how the apples and pears are selected before they ever reach a press. The annual Viking-themed Wassailing festival, held mid-winter, has become a draw in its own right. Come for the cider; stay for the fire-breathing dragon.
