Colin Bishop bought a derelict South Coast property in 1947 and rebuilt it as a dairy farm. His son Greg eventually turned it toward wine. The convict-era village — original sandstone, salvaged brick — was restored by hand through the late 1960s and reopened in 1972. Today you can taste estate-grown wines inside buildings that have been standing since 1822.
