When the 2020 harvest came in smoke-tainted from the Morton bushfires, Mike turned the grapes into gin — 'The Bandit' — rather than waste them. That instinct defines Dawning Day: estate Gamay, a méthode traditionnelle sparkling riddling until 2024, skin-contact 'Skin Shady', and house-made Pinot Noir vinegar. Around $60,000 in wine-sale proceeds has gone to refugee and homelessness organisations. A boutique barn sleeps guests onsite.
