Liz Beech moved her distillery from Mordialloc to a two-storey Victorian terrace on Errol Street mid-pandemic, installing copper pot still Eliza Jane behind glass-fronted walls that flood the room with light. The Casablanca-themed cellar door pours gin and vodka across tasting paddles; upstairs, masterclasses let visitors blend and bottle their own spirit. Both the gin and vodka have taken Australian Distilled Spirits Awards.
