Ross and Robyn Wilson planted this north-facing Gruyere hillside in 2000 with Chardonnay, Pinot Noir, Cabernet Sauvignon and Shiraz. The on-site winery — designed by Folk Architects and sunk into the slope with a living roof — won a Victorian Architectural Award in 2012. Come for single-site wines from a 25-year-old estate; the cellar door runs Thursday to Monday.
