Architect Nonda Katsalidis — MONA, Eureka Tower — grows Pinot Noir, Chardonnay, and Riesling on a white basalt mamelon at 630 metres above Romsey, one of only three such volcanic formations in Australia. Vines planted from 1998, farmed without herbicides, vinified with natural yeasts and no fining. The wines are lean, site-specific, built to age.
