The Mitolo family, originally from Abruzzo, have run Pizzateca among the vines on Chalk Hill Road in McLaren Vale since 2016. The pizza is Neapolitan: thin with a soft, airy crust, hand-shaped without rolling pins and fired in a Stefano Ferrara wood oven shipped from Naples. The family makes its own sugo from South Australian Virginia-grown Roma tomatoes, runs an Abruzzese line in charcoal-grilled arrosticini, and pours its own Oztalia wines.
