Riser

Brisbane, QLD

Duncan McKay (ex-Banneton) and Tom Cooney (formerly running Coffee Supreme's Queensland operation) had been talking about opening a bakery-café for six years before Kieran Ryan from The Scratch and Netherworld joined them in 2020 to launch Riser as a COVID-era bread subscription. Two years searching for a space later, they took over the storied old Queenslander on Miskin Street — Bruno Loubet's Bruno's Tables, then Brent Farrell's 85 Miskin Street, now theirs. Mount Zero olive sourdough, lemon zest and rosemary loaf, the Seedy Boi seeded loaf. Pastries by Kirsty Hustwick (ex-Loafer, ex-Sprout). Coffee Supreme's Five Star Day on the espresso. Organic waste goes to Loop Growers and comes back as vegetables. Open four days plus Sunday, until sold out.
