Four generations in, the Miranda family still make Col Fondo Prosecco the slow way — secondary fermentation in bottle, lees left in, no added sugar or preservatives. The result is cloudy, savoury, crisp. Botrytis dessert wines are the other specialty, built to age two or three decades. Cellar door tastings run nine wines for $15, redeemable on a case.
