Sevenhill's Jesuit fathers brought winemaking to the Clare Valley in 1851. Some 171 years later, the same village gained a gin distillery. Sawmill keeps things deliberate: pot-distilled single batches, seven botanicals per expression, natural grain spirit and rainwater harvested on site. Spent botanicals go back into the vineyard. A working operation, not a theme park.
