The Clare Valley's first winery, built by Jesuit brothers in 1851, remains estate-operated and pouring at Sevenhill. The cellar door carries the weight of that history without being precious about it — stone walls, old ground, wines grown on the same land the brothers originally cleared. A genuinely rare thing: continuity with something to show for it.
