Terry Morris started Sirromet in 2000 after Victorian dinner-party guests scoffed at the idea of quality Queensland wine. Grapes come from the Granite Belt — high altitude, cool climate — while the winery sits at Mount Cotton, between Brisbane and the Gold Coast. The Le Sauvage range uses wild yeast fermentation; the Private Collection sits at the top of the hierarchy.
