Music came before wine for Nikki Palun, who moved from music into the trade as De Bortoli's export manager before studying winemaking and starting her own labels in 2014. Under Susuro she makes lo-fi, small-batch wine from Italian varieties, Vermentino, Nebbiolo, Sagrantino, sourced from growers across Victoria and South Australia and matured in whatever mix of bins, tubs, barrels and tanks each parcel wants. Her classic varieties carry the name Octtava, a nod to the music she never left.
