Underground Spirits runs out of an unassuming shed in Kambah, where founder Toby Angstmann — a doctor by trade — adapted medical filtration into a patented sub-zero process that strips a spirit back to almost unnerving smoothness. It's applied across a gin and vodka range, but the breakout is the cult Vodka with Caramel. Visit the distillery for a tasting, open hours or by appointment.
