The origin story is literal: rooftop bees gathering nectar from Burleigh's flowers inspired the whole operation. At the Varsity Lakes cellar door — open Wednesday through Saturday — you can pick from over 50 botanicals and distil your own 500ml bottle on an alembic pot still. The Lamington Vodka suggests they're having fun with it. Friday and Saturday nights, the bar opens.
