Mary Mooney started making cheese in the early 1990s to add value to surplus milk from the family's dairy farm at Yering — Hubertswood, named for the 19th-century vigneron Hubert de Castella. Richard Thomas, the cheesemaker behind Milawa, Meredith and Tarago River, consulted for a year and helped develop the Persian Fetta — soft cow's milk cheese marinated in olive oil, garlic, peppercorns and herbs. The original Australian version of a now-ubiquitous style. Cheese shop in the 100-year-old milking shed, open daily.
