Chef Clinton McIver opened Amaru in 2016, after a stint as sous chef at Vue de Monde. The 34-seat room on High Street, Armadale, has an open kitchen sending a tasting menu of contemporary Australian cooking, built on local produce with techniques drawn from further afield. Chefs, waiters and sommeliers run each course to the table, paired from an extensive cellar or matched with house-made ferments and infusions. The Age Good Food Guide awarded Amaru three chef's hats in 2023.
