Set within Desert Gardens Hotel, this a la carte grill is the closest thing Yulara has to a destination restaurant, and the one dinner room travellers tend to book ahead for. The kitchen leans on the grill and on native flavours, pepper-leaf kangaroo loin, wagyu striploin, Murray Valley pork and local seafood, plated with an Australian wine list rather than resort-buffet convenience. It opens for dinner only, daily from 6pm to 8.30pm, so a 7pm table sits comfortably in the window, and reservations are worth locking in. Be clear-eyed about context: like everything at Uluru's Ayers Rock Resort, it is run by Voyages, the single operator behind the town's hotels and eateries. Within that closed setting, though, it stands on its own as a considered, produce-led room worth choosing over the food-court options a short walk away at the Town Square.
