Gelato and sorbet churned on Hyde Street from natural, largely local ingredients, with recipes built from scratch rather than pulled from a base mix. Collaborations run deep here, folding whey from nearby cheesemakers and spent coffee grounds into new flavours, and the results have been recognised as national Grand Champion against a field of well over a hundred entries.
