Ian Lewis cooked under Terry Fidler at this Brisbane Street bistro for the better part of a decade before he and maître d' Sarah Willis took it over. The menu puts classic French technique together with contemporary Australian cooking, then strips out anything that isn't pulling its weight, and Tasmanian produce leads. Fidler's awards built the room's reputation; the current pair have kept it.
