Lindsay Bourke started with 200 hives in 1966 while working for the Tasmanian Fire Service. Today his Sheffield operation — built around the state's oldest apiary, established 1898 — is Tasmania's largest commercial honey producer. Leatherwood, sourced from nearby rainforest, and clover from surrounding farmland are the core varieties. Meads and honey ales round out the range.
