Hospitality veteran Dimitris Limnatis launched Diablo Co in 2017 after spotting a gap for something lighter than craft beer. Built around Mary Valley spring water and Queensland ginger, the Sunshine Coast operation produces alcoholic and alcohol-free ginger beers — both certified gluten-free by Coeliac Australia — alongside Eros Vodka, rum, and fruit liqueurs including passionfruit and coconut.
