Gong GanKorean Pantry

MELBOURNE, VIC

Part kitchen, part pantry, this small Kew East room takes no bookings; you walk in, wait your turn, and eat what a Korean home cook might make you. The signature is gogi guksu in the Jeju style: wheat noodles set in a pork broth simmered towards milky richness over the better part of two days, clean and deeply savoury rather than heavy. Around it comes the comfort canon, hot stone dishes that reach the table still sizzling, kimbap rolled to order, braised and stewed plates that change with what the kitchen has on. Kimchi is made in house, and a corner of the shop turns that habit into a small grocery, selling the house ferment alongside banchan and Korean snacks to carry home. The scale is deliberately domestic, a handful of tables run by people who plainly cook the way they were fed, and the short midday-and-evening hours reflect it. It is the sort of place that rewards regulars: learn the rhythm, arrive when the doors open, and settle in for food made with none of the polish or the shortcuts of a busier room.
