Sam Martin trained as a dentist, not a brewer — but the biochemistry degree from UNE came first, and it shows. His Armidale brewery at 33 Old Inverell Road runs on evidence-based methods and a particular fixation on yeast behaviour. The beers take classic styles and shift them slightly: approachable enough for sceptics, interesting enough for the regulars who keep coming back.
