Matt, a South African-trained engineer-turned-distiller, runs this Darling Downs shed operation from Gowrie Junction. Each small-batch gin is made to its own recipe — some steep botanicals in the pot, some follow London Dry method, one traces back to an 1875 Encyclopaedia Britannica formula. Worth seeking out for that last one alone.
