The valley has history: an 1870s Scottish shale-mining settlement whose workers ran sly-grog stills between shifts. The Jimenez family, who now own the site, built on both legacies — establishing a distillery in 2014 that grows its own barley, draws from an on-site spring, and matures single malt in ex-Oloroso and ex-Pedro Ximenez barrels sourced through their own Spanish connections. Tours of the ghost town are included.
