Joshua McMullen and his team spent three years tinkering with small batches before committing to a full distillery in 2024. The target: a rich, smoky, peaty whisky made in a copper pot still — Rosie, modelled on the ancient stills of Islay — using hand-milled grain and spring water. Still young, but the direction is clear and the intent is serious.
