The science behind it — nitrogen used in place of sulphites, released by shaking — is genuinely interesting. McLaren Vale reds benchmarked against a proprietary "Marquis Fruit Weight" scale, with the flagship Velvet Glove requiring 95% minimum. Unusual, and it works.
