Two Georgian sandstone ex-warehouses on Salamanca Place, built by convict labour in 1835 and 1841, converted by Circa Morris-Nunn into a 41-room hotel split across Moss 39 (which opened first) and Moss 25, a city block apart. The Behrakis family — who've run Salamanca Fresh on the same strip for nearly 40 years — own and operate it. A nursery in the foothills of kunanyi grew the 5,000 endemic plants in the lightwells and rooms. Joinery by Andrew Bull, textiles by Hannah Lorenz, photography by Derek Henderson, Sud Polaire gin in the minibar. No restaurant — Salamanca handles that.
