James Young started Old Young's in Swan Valley in 2016 with a philosophy that included — genuinely — "embrace silly and get dirty." The spirits take themselves more seriously: the Six Seasons Gin pays tribute to the Noongar people's seasonal calendar, while Old B.A.G., a barrel-aged gin matured in Tronçais oak, ran to just 360 bottles. Tastings, masterclasses and an on-site kitchen round it out.
