Since 1983, Paulett has planted itself firmly in Polish Hill River's flinty subregion — the harder, cooler corner of Clare Valley that gives its Rieslings a mineral edge the valley floor doesn't quite match. The Bush deVine restaurant leans into Australian native ingredients; tasting flights come with canapes from the same kitchen. The verandah views are the kind that make another glass feel reasonable.
