The gin here starts not with botanicals but with yeast — the Adelaide outfit ferments its own spirit base before adding 13 locally sourced ingredients including lemon myrtle, strawberry gum, and pepperberry. The bramble, macerated in blackberry and lemon, is the crowd favourite. The navy strength (58%) comes with a gunpowder history lesson. Jeanneret wines and Prancing Pony beers round out the tasting room pour.
