A family-run Korean kitchen on A'Beckett Street, at the northern edge of the city's Little Italy, working in a tradition its name points straight at, the royal table of the Joseon court and the careful, seasonal court cuisine that once fed it. In practice that means comfort as much as ceremony: hot pots and hot plates brought to the table, long-simmered soups like ox-bone broth and a hearty army stew, dolsot bibimbap crackling in its stone bowl, and a marinated raw beef version alongside. There are the crowd-pleasers too, deep-fried cheese pork cutlet chief among them, but the heart of the place is the slow, restorative end of the Korean repertoire, the sort of cooking built for a Melbourne winter. Every meal arrives ringed with banchan, refilled without asking: pickled vegetables, seasoned bean sprouts, a rotation of kimchi. Open through the middle of the day and into the evening, seven days, it trades less on design than on generosity and consistency, the kind of neighbourhood room locals fold into their week. It is unshowy, deeply worked cooking that honours its royal namesake by getting the fundamentals right.
