Six generations of family winemaking, traced back to Joseph Gilbert's 1847 Eden Valley Riesling plantings. Today Simon and son Will make cool-climate wines from Mudgee vineyards at 520 metres, on quartz and clay soils that extend ripening into cool autumn nights. Will's Burgundy and Niagara vintages show in the Pinot Noir and Chardonnay — structured, site-specific, and built to age.
