The building on George Street has been hosting people since 1887 — first as the Port Jackson Hotel, then a private hotel from 1933, now a family-run boutique. Before that, the site served as Sydney's convict hospital, treating 500 sick arrivals from the Second Fleet alone. History is baked into the walls here; some rooms share bathrooms, which feels right.
