On the flank of Quoin Hill — a dormant volcano twenty minutes from Ballarat — Wayward grows Pinot Noir, Pinot Gris, Chardonnay and Shiraz. Chef Jayden's 65-seat restaurant runs a seasonal menu cooked over an Argentinian grill and wood-fired pizza oven, with produce pulled from the property itself. Sunsets face the Pyrenees Ranges. Open Friday to Sunday.
