On a former dairy farm in McLeods Shoot, Pam and Martin Brook planted over 40,000 subtropical rainforest trees from 1988. Their son's distillery now draws on that regrowth directly: 17 of the 25 botanicals in Brookie's Byron Dry Gin come from the property, including Davidson Plum for the Slow Gin and native ginger, cinnamon and aniseed myrtle harvested across seasons.
