Henry Smith is the sixth-generation farmer on a 1,308-hectare working sheep property in Tasmania's Northern Midlands; his wife Margit moved from Denmark in 2008 and runs the accommodation. Chatsworth (1838) is the homestead next door — three bedrooms, sleeps six, with a hectare of garden, eighty-year-old pear trees, and a peony garden Margit planted in 2023 (eight hundred plants, thirteen varieties, bunches sold from the roadside stall alongside Pop's raw honey from the farm's three hundred hives). Pick the vegetables, collect the eggs, walk to the Macquarie River for a trout.
