Henry Smith is the sixth-generation farmer on a 1,308-hectare working sheep property in Tasmania's Northern Midlands; his wife Margit moved from Denmark in 2008 and runs the accommodation. Chatsworth (1838) is the homestead next door — three bedrooms, sleeps six, with a hectare of garden, eighty-year-old pear trees, and a peony garden Margit planted in 2023 (eight hundred plants, thirteen varieties, bunches sold from the roadside stall alongside Pop's raw honey from the farm's three hundred hives).
