A bushfire burning into underground peat gave Damien Newton-Brown the idea: if Flinders Island had peat, it could produce a genuinely maritime peated single malt. The distillery now farms its own grain, distils through Tasmanian-made copper pot stills, and matures casks in a dunnage warehouse tucked into the trees above the beach. The Untamed Gin draws on wild-harvested kunzea and native rosemary from the surrounding islands.
