A bushfire burning into underground peat gave Damien Newton-Brown the idea: if Flinders Island had peat, it could produce a genuinely maritime peated single malt. The distillery now farms its own grain, distils through Tasmanian-made copper pot stills, and matures casks in a dunnage warehouse tucked into the trees above the beach. The Untamed Gin draws on wild-harvested kunzea and native rosemary from the surrounding islands.

Sawyers Bay Unpeated Double Oak. 50 Year Old Seppeltsfield Tawny Port quarter casks form the heart of this dram, building a rich and expansive palate layered with lush dried fruits, muscatel grapes and dates. These casks were married with bourbon casks bringing soft vanilla sweetness and creamy oak that rounds the back palate into a beautifully balanced whole. 43.3% ABV, 700ml
Visitors to the distillery can experience tasting flights of our core range plus limited releases and "last pours" bottlings. Our beautiful cellar door has a fully stocked bar and some light snacks, so you can take your time and enjoy the view on the farm.
