A boutique cheese plant on the edge of Mudgee, set up so visitors can watch the make through two large windows into the make room and one each into two of the three maturing rooms. The milk comes from Little Big Dairy Co in Dubbo — same-day from paddock to plant. The range runs wider than most small creameries: Caerphilly, two blues (Stefan and Colly), a washed-rind Rouge, smoked cheddar, brie, and the marinated fetta that's gone national through stockists. Tastings 10am–4pm seven days from the cellar shared with Gilbert Family Wines next door.
