Sonia and her team run a working goat dairy on Main Creek Road in Main Ridge, where head cheesemaker Charlotte makes seven cheeses on site — Cashmere (hand-ladled slow-set lactic curds), Capriole (a lightly ashed white-mould log), Cilia (a Normandy-style Camembert), Chevre, Feta, the semi-hard Capony and Caprinella. The Feta has held Sydney Royal Gold. Visitors come for Billies, the on-site cafe, plus grazing tables, paddock walks, and goat feeding. Belted Galloway cows graze the paddocks first because the goats prefer rougher pasture
