Anthony Femia started Maker & Monger as an antique French food cart in Prahran Market, selling raclette over kipflers and a single grilled cheese toastie. The cart became a stall with a seven-metre cheese cabinet and a maturation room. Femia, who studied affinage on a Churchill Fellowship, travels to choose cheeses sold only here, and was the first Australian cheesemonger invited to Marcel Petite in the Jura to select a Comté of his own. The toasties survived the move.
